
Kerala Breakfast Recipes: Puttu, Appam & More
Kerala breakfasts are unlike anything else in India. The combination of steamed, fermented, and fried preparations with fresh coconut-based accompaniments makes for a truly unique morning meal.
Puttu is perhaps the most iconic Kerala breakfast - cylinders of steamed rice flour layered with grated coconut. Use Nirapara or Double Horse puttu podi for the best results.
Appam are lace-thin, bowl-shaped pancakes made from fermented rice batter with a soft, spongy centre. They pair perfectly with vegetable stew or egg curry.
Idiyappam (string hoppers) are delicate nests of pressed rice noodles, steamed to perfection. Serve with coconut milk or a spicy curry for a light, satisfying meal.
Dosa needs no introduction, but Kerala-style dosas are distinctively thinner and crispier. A good quality dosa podi mixed with water and left to ferment overnight gives the best results.
